1. Chop the top of the bell peppers and carve them
2. Arrange them inside the slow cooker
3. Using a food processor (or chopping with a knife), mince the carrots, cauliflower, onion and garlic
4. In a bowl, mix together the veggies, pork, tomato paste and seasonings; add salt & pepper
5. Stuff the bell peppers, put excess between them
6. Cook on low for 6-8 hours
