0.50 pound Sun-dried tomato pesto

1. Peel the carrots and cut them in 3-4 inch sticks (save for later)
2. Do the same with the celery sticks (save for later)
3. Thinly slice the tomatoes
4. Thinly slice the mozzarella
5. Spread the bread slices with tomato pesto
6. Place tomatoes and mozzarella on the one half of the bread slices, and then cover with the other half
7. Place the sandwiches in a sandwich maker for a few minutes — alternatively, use a buttered skillet on medium and cook until brown
8. Serve with the veggie sticks & ranch
